Ingredients
  

  • 3 tbsp Massaman Curry Paste
  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Corriander
  • 1 Sweet Potato peeled and cut into 20mm cubes
  • 500 g Beef Steak cut into15-20mm cubes
  • 400 ml Coconut Milk
  • 200 ml Coconut Cream
  • 75 g Unsalted Cashew Nuts chopped
  • 1 tsp Soft Brown Sugar
  • 150 ml water
  • 4 Kaffir Lime Leaves
  • 1 Large Onion Cut into pieces up to 25mm in size
  • 5 Spring Onions Cut into 10mm pieces
  • 1 tsp Garam Masala
  • Fresh Coriander

Instructions
 

  • Add the Massaman curry paste, coconut milk, coconut cream, ground cumin and ground coriander and water to the wok, and stir over a medium heat until they are all mixed together.
  • Add the chopped onion, sweet potato and chopped beef, stir and then simmer for 15 minutes
  • Add the sugar, cashew nuts, spring onions and kaffir lime leaves, stir and then simmer for 5 minutes
  • Add the fresh coriander and garam masala, stir and simmer for 5 minutes
  • Serve on its own with naan bread or serve with rice.
