Broccoli and Goats Cheese Pesto
A bowl of pasta with pesto is a quick and tasty snack, and making this broccoli and goats cheese pesto takes just a few minutes. You will need:
- 1 stem of broccoli (uncooked)
- 50g goats cheese
- 2-3 tbsp olive oil
- 1 garlic clove
- handful of basil leaves
- handful of coriander leaves
Cut the broccoli into pieces around a 2-3cm thick, and place them in your food processor or Bullet blender. Turn it on until the broccoli pieces are around 5mm in size.
Now add the remaining ingredients to the machine and turn it on until everything is finely chopped. You may need to add more olive oil to get the consistency you prefer. Taste it, and season if required.
Transfer to an airtight container and store in the refrigerator. If you don’t have an airtight container, simply smooth the top of the pesto and cover with a thin layer of olive oil.
