Homemade Pizza Cooked on the BBQ

We all love a great pizza, and this recipe makes it really easy to make your own pizza at home, and you can cook it on a BBQ if like me, you don’t have access to an oven.

To make the pizza dough, you will need:

  • 200g plain flour plus extra for dusting
  • 150ml warm water
  • 1x 7g sachet of instant yeast
  • pinch of salt
  • 3 tbsp olive oil

To make the pizza you will need:

  • 6-8 tbsp passata
  • 150g grated cheese
  • oregano
  • basil
  • any other toppings you wish to add

Oil two oven trays and a large bowl with some of the olive oil. In another large bowl, mix the flour, salt and yeast and create a well in the middle. Add 1 tbsp olive oil and the warm water. Slowly mix everything using a silicone spatula or wooden spoon starting in the middle and slowing bringing all the ingredients together until you are left with a wet dough. As flours can vary, you may need to add a little more water, but do this slowly, just a couple of tea spoons at a time.

When you have mixed the dough, take it from the bowl on to a smooth and floured surface and fold and press it for around 5 minutes until it is smooth. Place the dough in the oiled bowl, roll it around so it becomes covered in the oil, cover the bowl with clingfilm and place in a warm part of the house for around 45 minutes or until the dough has doubled in size.

When the dough has doubled in size, take it out of the bowl and place it onto a floured surface. Cut the dough in half and put half back in the oiled bowl. Using your hands, push out the dough so it is nice and thin (1-2mm) but with an outer edge about 3-4mm thick. Place the pizza base on one of the baking trays and repeat this step with the 2nd piece of pizza dough.

Spread 3-4 tbsp of passata evenly on the pizza base. Then spread some of the grated cheese over the top of the passata.

Add you choice of toppings, I used chopped peppers on both of my pizzas, and then some slices of goats cheese on one, and sprinkle with oregano and basil, salt and pepper, and drizzle with olive oil.

As I don’t have access to an oven where I am, I had to cook my pizzas in a gas BBQ. I got the grill hot, put the baking trays inside, closed the lid and the pizzas were cooked in around 8-9 minutes.

Alternatively, you can cook them in a conventional oven for around 18-20 minutes.
