Perfect Pilau Rice (Pilaf)
Nothing compliments a curry like pilau rice, and it is really easy to make. The ingredients you will need to make pilau rice for 4 people are:
- 200g Basmati rice (rinsed)
- 400ml boiling water
- 6 cloves
- 4 green cardamon pods
- 1 tsp nigela seeds
- 1 tsp cumin seeds
- 1 cinnamon stick
- 1 bay leaf
- 1 onion (chopped)
- 25g butter
- Handful of frozen peas
Before we start, I can’t emphasise enough the importance of using premium quality basmati rice. I always use Asian Powers basmati rice, as it has almost no starch and cooks perfectly every time.
In a medium size pan, melt the butter and add the bay leaf, cinnamon stick, chopped onion, cloves, cardamon pods, salt, turmeric and cumin seeds, and stir regularly.
When the onions have softened, add the rice and stir until the rice has taken on a yellow colour from the turmeric, and add the boiling water and peas and stir. Bring the water back to a gentle boil and place a lid on the pan.
Leave for 10 minutes, then turn off the heat but leave the pan on the hob for a few minutes, allowing the rice to steam inside the pan.
Remove the lid, sprinkle with the nigela seeds and stir before serving or transfering to a serving dish.
This dish compliments my vegetable madras curry perfectly.
