Spicy Thai Rice

This dish is so easy to make and it will transform your Thai curry meal. The ingredients you will need are:

  • 200g basmati rice (rinsed)
  • 1 can of coconut milk
  • 1/8 tsp turmeric
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1 tsp sugar
  • 1 tsp root ginger (chopped)
  • handful of frozen peas
  • handful of chopped cashew nuts
  • 1 spring onion (chopped) – optional

Place everything except the cashew nuts and peas into a large saucepan. After emptying the can of coconut milk into the pan, fill the empty can with water and add the water to the pan of ingredients.

Turn on the hob, bring to the boil whilst stirring everything, and once the liquid is boiling, reduce to a low setting and place a lid on the pan.

After 10 minutes, turn off the hob and add the peas and chopped cashew nuts (and optional spring onion), stir and replace the lid. Leave to steam for 5 minutes, stir once more and serve or transfer into a serving dish.
