Spicy Vegetable Couscous

This recipe is great on its own, hot or cold, or as an accompaniment to my Morrocan tagine recipe. To make this recipe, you will need:
- 1 onion (chopped)
- 1 tbsp olive oil
- 1 beef tomato (chopped)
- 1/2 courgette (cut into 1cm cubes)
- 1/2 sweet red pepper (cut into 1cm squares)
- 1 garlic clove (crushed)
- small jar of soaked chickpeas
- 1/2 tsp salt
- 1 tsp curry powder
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp crushed chilli flakes
- 1 cup of couscous
- 1 cup of boiling water
In a large pan, heat the olive oil and add the onion, garlic, tomato, courgette and red pepper and stir over a medium heat for 5 minutes.
In another large pan, add the remaining ingredients, stir thoroughly, cover and leave for 5 minutes. Add the sauted vegetables from the first pan, mix together and serve.
